Kulich (also known as kulitschi in Ukrainian) is a traditional sweet Easter bread from Eastern Europe, especially popular in countries like Russia, Ukraine, and Belarus. It’s a tall, rich, and slightly sweet yeast bread made with eggs, butter, and often raisins or candied fruit.

Kulich is baked to celebrate Easter, symbolizing rebirth, resurrection, and the end of Lent. After a long period of fasting, this luxurious bread — often glazed and decorated — is enjoyed during Easter festivities. It’s also common to have it blessed at church on Easter morning before being shared with family.

Ingredients

Dough:

  • 1 cup (240 ml) warm whole milk
  • 1 tbsp active dry yeast
  • ½ cup (100 g) granulated sugar
  • 4 large eggs, room temperature
  • ⅔ cup (150 g) unsalted butter, melted
  • 1 tsp vanilla extract
  • ½ tsp salt
  • 4¾ to 5¼ cups (600–650 g) all-purpose flour
  • ½ cup (100 g) raisins or candied fruit
  • 1 tsp lemon zest (optional)
  • ½ tsp ground cardamom (optional)

Glaze:

  • 1¼ cups (150 g) powdered sugar
  • 1–2 tbsp lemon juice or water
  • Sprinkles, for decoration

Instructions

  1. Activate the yeast:
    In a small bowl, combine the warm milk, yeast, and 1 tablespoon of sugar. Let it sit for 10 minutes until frothy.
  2. Mix the dough:
    In a large bowl, whisk together the eggs and remaining sugar. Stir in the melted butter, vanilla, salt, lemon zest, and cardamom. Add the yeast mixture and mix well.
  3. Add the flour:
    Gradually add flour until a soft, slightly sticky dough forms. Knead for about 8–10 minutes, then fold in the raisins or candied fruit.
  4. First rise:
    Place the dough in a greased bowl, cover with a cloth, and let rise in a warm place for 1.5–2 hours, or until doubled in size.
  5. Shape and rise again:
    Punch down the dough, divide it, and place into greased tall baking tins or paper molds (fill only ⅓ full). Let rise again for 1 hour until almost doubled.
  6. Bake:
    Preheat the oven to 350°F (180°C). Bake for 35–40 minutes. If the tops brown too quickly, cover with foil halfway through.
  7. Cool and glaze:
    Let the loaves cool completely. Mix powdered sugar with lemon juice to create a thick glaze and drizzle over the top. Decorate with sprinkles.
